Kumara Lasagne

Ingredients
4 large kumara, peeled and chopped
25g butter
2 eggs, lightly beaten
1/4 tsp ground nutmeg
300g fresh or instant lasagne sheets
1 cup cheese
1/2 cup toasted pine nuts
1 bunch chopped spinach
1/3 cup grated parmesan cheese
salt and pepper to taste
Method
Preparation Instructions
Preheat oven to 180 degrees Celsius. Grease a medium size baking dish. Cook kumara till soft, drain well and mash. Mix in butter, eggs and nutmeg. Season with salt and pepper. Put a layer of the kumara mix into the baking dish. Sprinkle with some cheese and some of pine nuts. Place a layer of spinach. Cover the layer with lasagne sheets. Repeat the layers and finish with layer of cheese and pine nuts and sprinkle on half the parmesan.
Cooking Instructions
Bake for 30 minutes or until pasta is cooked. Top with remainder of parmesan while still hot.
Serving Instructions
Serve with a lettuce salad or steamed green vegetables.
