Kumara Pecan Quick Bread

This moist kumara bread is low in fat and easy to make.

Ingredients

1 1/2 cups all-purpose flour, sifted
2 tsp baking powder
1/4 tsp salt
1 tsp ground mace spice or substitute with ground nutmeg
1/2 tsp cinnamon
1 cup granulated sugar
1 cup chopped pecans
1/2 cup chopped dates or raisins
2 large eggs, lightly beaten
1/2 cup apple puree (tinned or homemade)
4 tbsp milk
1 cup cooked, mashed kumara

Method

Preparation Instructions

Grease bottom of loaf pan approximately 9x5x3 inches. Stir together flour, baking powder, salt and spices in mixing bowl then stir in the sugar, pecan and raisins or dates. In a separate bowl combine eggs, apple puree, milk and mashed kumara; stir to blend well. Add wet mixture to the dry ingredients and mix with a large spoon until the mixture is moistened. Pour batter into prepared pan.

Cooking Instructions

Bake at 160 degrees Celsius for about an hour and 10 minutes or until skewer inserted comes out clean. Cool in pan on a rack for 15 minutes. Remove from pan and continue cooling on a wire rack.
