Kai Moana and Kumara Fritters

Ingredients
50 steamed tuatua, pipi or mussels (about 3 cups shelled)
1 tsp crushed garlic
1/2 cup flour
3/4 tsp baking powder
big pinch both ground coriander and cumin
salt and pepper to taste
1/4 cup milk
1 egg
1/2 cup grated kumara
1 tbsp chopped fresh parsley
olive oil for frying
Method
Preparation Instructions
Put steamed tuatua or mussels in blender with garlic and pulse. Soften kumara in fry pan with oil. Sift flour, baking powder, spices and seasoning into a bowl. Add milk and egg stirring to combine. Add the kai moana, kumara and parsley. Stir to combine the batter ingredients.
Cooking Instructions
Heat frying pan or BBQ plate and spoon heaped tablespoon full of batter on the hot surface. Fry about 2 minutes on each side. Drain on a paper towel and serve hot.
Serving Instructions
Kids love these with good old tomato sauce. The adults may prefer a lemon wedge or sweet chilli dipping sauce to accompany their fritters.
