Ingredients
1 cup wholemeal flour
1 cup flour
2 cups of raw sugar
2 tsps baking soda
1/4 tsp salt
2 tsps cinnamon
1 cup cooking oil
4 eggs, beaten
3 cups finely grated Beauregard Kumara
ICING
50 gms butter
100 gms cream cheese
2 cups sifted icing sugar
1 tsp vanilla essence
Method
Preparation Instructions
Sift and mix dry ingredients. Add oil and stir well. Stir in beaten eggs then add Beauregard Kumara. Mix thoroughly. Grease the sides of a 20 cm square cake tin and line the bottom with greaseproof paper. Pour mixture into prepared tin.
Cooking Instructions
Bake at 180 degrees Celsius for 50 minutes or until cooked.
Serving Instructions
Ice when cake is cold. Make icing by beating all icing ingredients together thoroughly. Alternatively, ice with lemon icing if preferred.
