Kumara Croquettes

Ingredients
4 medium kumara
2 tbsp butter
1 tsp salt
fresh black pepper
1 tsp grated nutmeg
2-3 tbsp flour
1 egg
1 tbsp water
1/2 cup fine bread crumbs
Method
Preparation Instructions
Cook peeled kumara in salted water until tender. Drain well and mash with butter until smooth and fluffy. Chill the mixture. When cool, shape into cylinders using wetted hands. Roll the shapes in flour. Dip into egg mixture (salt, pepper, nutmeg, egg, water). Roll in breadcrumbs. Deep fry, in hot oil, for 3-4 minutes until golden brown. Drain well on a kitchen paper towel. Serve hot with a selection of your favourite dipping sauces: sweet Thai chilli, plum sauce, sour cream, garlic aioli.
