Herb and Cheese Kumara Puffs

A tasty bite sized morsel. Great as a starter served on platters with dipping sauces or presented as an accompaniment to the main course.

Ingredients

1 1/4 kg kumara, cooked and mashed
1/2 cup corn flour
1/4 cup flour
2 tbsp melted butter
1 egg
2 tbsp grated onion
1 tsp chopped parsley
clove of garlic, crushed
1 tsp basil
1 tsp marjoram
25g tasty cheese, cut into small cubes

Method

Preparation Instructions

Combine all the ingredients except cheese and oil, and beat until fluffy. Using a teaspoon shape mixture into 1 inch balls. Place a cheese cube in the centre of each ball and roll to ensure that cheese is covered. Arrange on a baking sheet until ready to fry.

Cooking Instructions

Arrange on a baking sheet until ready to fry. Heat oil to 190 degrees Celsius and deep fry a few at a time until golden brown. Drain on a kitchen paper towel.

Serving Instructions

Serve hot with a selection of your favourite dipping sauces: sweet Thai chilli, plum sauce, sour cream, garlic aioli. Will make about 5-6 dozen puffs.
