Roast Duck or Chicken with Kumara Stuffing

Ingredients
1 number 8 chicken or similar size duck
STUFFING
500g cooked mashed kumara
1/2 cup fresh orange juice
1/4 cup chopped onion
2 tbsp dry sherry
1 tsp sugar
salt and pepper
1 tbsp grated orange zest
25g melted butter
Method
Cooking Instructions
Mix all stuffing ingredients together and season as desired. Spoon the stuffing mixture into the body cavity of duck or chicken. Roast for 1 1/2 hours at 180 degrees Celsius, or until juices run clear. Serve with a roast kumara medley or search our side dishes for an accompaniment.
