Ingredients
2 medium sized Delta Sweet Harvest Gold kumara
1 large red onion
1 tbsp of coriander leaves
1 tbsp of mint leaves
3 cm piece of root ginger
1 tsp of tumeric powder
1 clove of garlic
1 small red chilli
4 tablespoons of flour
1/4 cup of peanuts
peanut oil
dipping sauces e.g. Thai chilli, satay or tamarind
Method
Preparation Instructions
Finely slice kumara to match stick size pieces Slice up onion length-wise Grate ginger Crush garlic Seed and finely chop red chilli Crush and toast peanuts Mix together all the ingredients except the peanut oil for frying Add approximately 1/4 cup of water so that everything becomes like a thick batter
Cooking Instructions
Heat peanut oil in a deep fryer When oil is hot add spoonfuls of the mixture in small batches and fry until golden
Serving Instructions
Place balls on a platter, add garnish and serve with your selection of dipping sauces
