
Chickpea and Kumara Koftas

Ingredients
1 medium sized kumara
2 cups cooked chickpeas (or tinned)
2 spring onions, cut into 1 inch pieces
1 tsp cumin
1 tsp ginger
1 tsp salt
2 tbsp lemon juice
black pepper to taste
6 tbsp flour
1 cup peas (fresh or frozen)
oil for frying
Method
Preparation Instructions
Peel and cube the kumara and steam, boil or microwave until tender. Put all ingredients, except for the flour and peas, into a food processor and puree. Mix in the flour and add the peas.
Cooking Instructions
Form patties and fry on both sides till golden brown.
Serving Instructions
These koftas are lovely served with chutney, aioli or tzasiki dips.
