Cajun Kumara Wedges a la Funky Fish

A favourite snack for the locals who frequent the Funky Fish watering hole.

Ingredients

4 kumara
Cajun spice (masterfoods)
3 rashers bacon, cooked and diced
1/2 cup tasty cheese, grated
1/2 cup mozzarella cheese, grated
1 small red onion, diced
1 pottle of sour cream
fresh chives, chopped

Method

Preparation Instructions

Scrub and de-eye the kumara. Cover with cold salted water and boil until kumara are 3/4 cooked through. Drain from pot and cool then cut into chunky sized wedges.

Cooking Instructions

Deep fry wedges until golden brown. Drain well and sprinkle with Cajun spice.

Serving Instructions

Drain well and sprinkle with Cajun spice. Arrange onto small plates and top with onion, bacon, combination of tasty and mozzarella cheese and grill until golden. Sprinkle with herbs and serve with a dipping bowl of sour cream. Remember that after grilling plates will be hot – try putting hot plate on another cold plate with a napkin in between to solve this issue.
